Coriander-Lime Mayonnaise Recipe | Dipping Sauce for Fried Cassava or Grilled Chicken

This Coriander Mayonnaise is very delicious with Fried Cassava, Peruvian Chicken, Fish Tacos or any other dish! Give it a try!!


Coriander-Lime Mayonnaise Recipe Cooking Time: 10 mins (approx)

Serves 3-4 People

INGREDIENTS:


· 1 Cup (packed) Coriander Leaves (Tender Stems also)

· 1/3 Cup Mayonnaise

· 1–2 Green Chilis (as per heat desired)

· 1 Garlic Clove, crushed

· 1 Tbspn Extra Virgin Olive Oil

· Juice of 1 Lime

· 1/4 Tspn Salt

METHOD:


Wash, dry and cut the coriander coarsely. Add this to the blender


Add the crushed garlic clove, green chilis, olive oil, lime juice and salt along with the mayonnaise.


Blitz in a blender for about 15 seconds, mixing to ensure all the ingredients blend well, but do not over blend as the consistency of the mayonnaise will change and become runny.


Taste the sauce to ensure the seasonings are to your taste.


Enjoy with Fried Cassava, Peruvian Chicken, Fish Tacos, Falafels or any other exotic dish! This sauce would also go well with grilled meats.
