Spicy BBQ Marinade Recipe for Chicken Wings, Chicken Burgers, Chicken Bites or Paneer

In this blog, I'm going to share a super-delicious BBQ marinade recipe for Chicken Wings, Chicken Burgers, Chicken Bites or Paneer! This BBQ marinade recipe is so versatile, you can even add it to some fried onions with some chicken or paneer and cook it on a skillet for tasty appetiser! But BBQing gives the best flavour!


It may seem like cheating because I am using Patak's sauce, but, hey, whose judging if the results are amazing?!? So give this recipe a go! It'll become one of your go-to recipes this summer! ENJOY!



BBQ Marinade Recipe for Wings, Burgers, Paneer


Course: Main or Appetiser

Cooking Time: 60 Minutes (Approx) Plus Overnight Marinating

Serves 3-4 People for Appetiser 2-3 for Main with a Salad

Difficulty: Easy

INGREDIENTS

  • 2KG Whole Wings (21-22 Wings), remove tip and take skin off

  • 3 TBSP Ginger-Garlic-Chili Paste

  • 3 TBSP Pathak's Madras Curry (Spice) Paste

  • 1/4 Cup Oil (Sunflower or Vegetable)

  • 3-4 TBS Fresh Lemon Juice (can use bottled too)

  • 2 tsp Salt

  • 1 tsp. Paprika

  • ½ tsp Red Chilli Powder

  • 2 tsp. Ground Cumin

  • 3 TBSP Chopped Coriander


METHOD


  1. Remove the tips from the chicken wings and remove as much skin as you can, especially the thicker parts of skin on the drummette and the sides of the flat wing. DO NOT separate the drummette and the flat as this makes it easier to cook on the BBQ. Place the prepared wings in a bowl or a ziplock bag for marinating.


  2. In a bowl, mix the marinade ingredients:

    1. 3 TBSP Ginger-Garlic-Chili Paste

    2. 3 TBSP Pathak's Madras Curry (Spice) Paste

    3. 1/4 Cup Oil (Sunflower or Vegetable)

    4. 3-4 TBS Fresh Lemon Juice (can use bottled too)

    5. 2 tsp Salt

    6. 1 tsp. Paprika

    7. ½ tsp Red Chilli Powder

    8. 2 tsp. Ground Cumin

    9. 3 TBSP Chopped Coriander


  3. Add the marinade to the wings and mix well so that the spice mix covers all of the wings.

    Tip: Using a Ziploc bag helps keep your hands from smelling like curry!


  4. Refridgerate the wings overnight.


  5. When you are ready to BBQ, remove the marinated wings from the fridge and leave them at room temparture for about 30 minutes. Then BBQ as normal.


  6. To speed up the cooking process, you can place the marinated wings in a pre-heated oven at 190ºC for about 20 minutes and then finish the cooking process on the BBQ.


  7. Alternatively, you can fully cook the marinated wings in an air fryer following the air fryer's cooking instructions. Or partially cook in the air fryer and finish on the grill.


  8. NOTE: be sure to baste the chicken with any marinade you have left in the bowl or bag while you are cooking.


  9. Garnish with a little freshly chopped coriander and serve with a slice of lemon and onion salad.


  10. Chicken Burgers: To make Chicken Burgers, add a few teaspoons full of the marinade to some ground/minced chicken. You will need about 1 tsp full per burger. You may need to add a little more salt but make a small burger first and taste it.


  11. Appetiser Chicken Bites: To make chicken bites, cut up some onion finely and fry it in a pan with some oil. Add some of the marinade mix and fry it a little. Then add some diced chicken thighs or chicken breast and cook it, stirring frequently. Taste it and add more marinade if needed. Serve with toothpicks!


  12. Spicy BBQ Paneer: Cut up paneer into chunks large enough to grill. Marinate the paneer chunks in the marinade for a few hours or overnight. Place on bamboo skewers along with some peppers and onions. BBQ on the grill.


  13. Any leftovers can be refridgerated or frozen. Heat up in the microwave, oven, or airfryer.
