Easy Chevti Dal Recipe | Best Instant Pot Dal Recipe | How to Make Dal

Here is an easy and delicious dal recipe for you to try. The recipe has been passed down from generations in our family and, once you taste it, you'll see why!


The name 'chevti' comes from the fact that this dal is made with four different types of lentils: Urad Dal, Moong Dal, Chana Dal and Toor Dal. With this mixture proportioned as mentioned below, the texture and the taste is just unbeatable!

Gujarati Chevti Dal Recipe (Serves 3-4)

Cooking Time 40 Minutes (Approx)

INGREDIENTS:


· ½ Cup / 100g / 3.5 oz Moong Dal

· ½ Cup / 100g / 3.5 oz Urad Dal

· ½ Cup / 100g / 3.5 oz Chana Dal

· ¼ Cup / 50g / 1.8 oz Toor Dal

· 1 Tbspn Oil

· 2 Cloves of Garlic - crushed

· 1 Tbspn Ghee (or Olive Oil for Vegans)

· 1 Onion – chopped

· 1 Tomato – chopped

· ¼ tspn Turmeric

· 1.5 tspn Salt

· Garam Masala for Garnish

METHOD:


Look over all the dal and remove any foreign particles such as rocks or stones.


Rinse dal thoroughly under cold running water.


Place washed dal in Instant Pot and add 4 Cups / 32 fl oz of cold water, the oil and the salt.


Cover the Instant Pot and cook on medium pressure for 15 minutes.


In the meantime, prepare the garlic, onion and tomato.


Heat a pan on medium heat and add the ghee. When the ghee has melted, add the crushed garlic.


Fry the garlic until the raw smell goes away, but don’t let it go brown.


Add the onions and fry until they are just about to turn golden in colour.


Add the ginger-garlic-chili paste and the turmeric and stir-fry this for 30 seconds to a minute.


Then add the chopped tomatoes. Reduce the heat to low, cover with a lid, and cook until the tomatoes are soft.


Once the tomatoes are soft, turn off the heat and leave it to rest while you check on the dal.


When the dal is cooked in the Instant Pot, release the pressure using the valve. Be careful, as this is VERY HOT!


Open the lid and check on the dal by pressing one with your finger. The dal is cooked when it is very soft to the touch.


Stir the dal, then blend it with a hand blender, but only until about half the dal has been blended. You want to keep some texture in it.


Then add the onion and tomato mix from the frying pan to the dal in the Instant Pot and stir.


Add water to get the dal to the consistency that you like, and let this simmer on sauté mode for 2 minutes.


Garnish with Garam Masala and chopped coriander. Enjoy with a sprinkle of lemon juice and hot roti.
